Dr Stuart's Fruit Salad
You may feel as though you are in winter hibernation so a tropical alarm call! This exhilarating recipe would make a great breakfast dish or zesty finish to a Sunday roast!
High vitamin C content of the kiwi fruit combined with Echinacea will help to fight off those lingering bugs, coughs & sneezes.
Ingredients:
- 3 Dr Stuart's Echinacea tea bags
- 3 ripe Kiwi fruits
- Honeydew melon
- ½ inch piece of fresh ginger grated
- 100 g sugar
- 100 ml just boiled water
- 2/3 strip lemon zest
- Bring water to boil in small saucepan, turn off heat & steep tea bag. Allow to stand for 5 minutes, give bags a squeeze and remove.
- Squash then roughly chop one lemon grass stalk add to saucepan along with lemon zest.
- Add the sugar and stir over low heat until all the sugar is dissolved, then bring to boil for 5 minutes. Remove from heat and allow syrup to cool.
- Strain syrup into bowl and add grated ginger & squeeze of lemon juice.
- Peel & thinly slice the kiwis, ball or cube a portion of melon and mix the two into the syrup.
- Serve lightly chilled with a few curly strips of lemon zest for decoration and extra zing.
