Dr Stuart's Fruit Salad

You may feel as though you are in winter hibernation so a tropical alarm call! This exhilarating recipe would make a great breakfast dish or zesty finish to a Sunday roast!

High vitamin C content of the kiwi fruit combined with Echinacea will help to fight off those lingering bugs, coughs & sneezes.

Ingredients:

  1. Bring water to boil in small saucepan, turn off heat & steep tea bag. Allow to stand for 5 minutes, give bags a squeeze and remove.
  2. Squash then roughly chop one lemon grass stalk add to saucepan along with lemon zest.
  3. Add the sugar and stir over low heat until all the sugar is dissolved, then bring to boil for 5 minutes. Remove from heat and allow syrup to cool.
  4. Strain syrup into bowl and add grated ginger & squeeze of lemon juice.
  5. Peel & thinly slice the kiwis, ball or cube a portion of melon and mix the two into the syrup.
  6. Serve lightly chilled with a few curly strips of lemon zest for decoration and extra zing.
